Ingredients
2tbspolive oil
1medium Yukon gold potatocut into 1-inch cubes
1head(~9 oz) broccolicut into bite-sized florets
Salt and pepper
6ozSpamcut into cubes
3eggs
1tbspsour cream or yogurt
1/2cupshredded white cheddar cheese

Instructions
Heat 1 tbsp olive oil in a large skillet over medium heat. Add potato and broccoli to skillet, season with a pinch of salt and pepper, and toss to coat in oil. Add 1 tbsp water, cover, and cook for 5 minutes. Uncover, add spam, and cook for an additional 5-10 minutes, stirring occasionally, until browned and vegetables are tender.
While vegetables are cooking whisk together eggs, sour cream or yogurt, and a pinch of salt and pepper in a small bowl. Set aside.
Remove contents of skillet to a bowl. Add remaining 1 tbsp olive oil to skillet and reduce heat to low. Add egg mixture and cook, stirring to break up curds, until only slightly wet appearing. Remove from heat and return broccoli, potatoes, and spam to the pan. Sprinkle cheese over the top and cover for about 1 minute until cheese is melted.
