Sourdough Snack Bars

These sourdough snacks bars are positively jam-packed with nuts, dried fruit, and chocolate for whenever you want a little treat.

Ingredients

  • 250 grams (1 cup) sourdough starter unfed/discard, 100% hydration
  • 40 grams (1/2 cup) old fashioned rolled oats
  • 100 grams (1/2 cup) neutral oil such as canola
  • 75 grams (1/4 cup) maple syrup or honey
  • 1 large egg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon almond or vanilla extract
  • 1/4 teaspoon salt
  • 78 grams (1/2 cup) whole wheat flour
  • 40 grams (1/3 cup) shredded unsweetened coconut
  • 150 grams (1 cup) unsalted nuts chopped
  • 80 grams (1/2 cup) dried fruit
  • 85 grams (1/2 cup) chocolate chips

Instructions

  • Preheat oven to 350°. Line an 8-inch square cake pan with parchment paper.
  • In a large bowl mix together sourdough starter, oats, oil, maple syrup or honey, egg, cinnamon, almond or vanilla extract, and salt until well combined. Add flour and coconut and mix until just incorporated. Fold in nuts, dried fruit, and chocolate chips.
  • Transfer to prepared cake pan and spread into an even layer. Bake for 30-35 minutes until it is set and appears only slightly wet in the center. Allow to cool completely in the pan before removing and slicing.

Notes

These will keep quite well, for a week or more, in a sealed container or ziplock bag.
