Preheat oven to 350°. Line an 8-inch square cake pan with parchment paper.
In a large bowl mix together sourdough starter, oats, oil, maple syrup or honey, egg, cinnamon, almond or vanilla extract, and salt until well combined. Add flour and coconut and mix until just incorporated. Fold in nuts, dried fruit, and chocolate chips.
Transfer to prepared cake pan and spread into an even layer. Bake for 30-35 minutes until it is set and appears only slightly wet in the center. Allow to cool completely in the pan before removing and slicing.
Notes
These will keep quite well, for a week or more, in a sealed container or ziplock bag.
