This has all the best elements of a pizza—crisp bread, melty cheese, and flavorful tomato sauce—but without all the effort. Perfect as is for brunch and lunch or dress it up with sausage and mushrooms for a heartier dinner. Alternatively, for your next gathering (Super Bowl maybe?) this could be doubled and served as a shared appetizer. The choice is yours and there are no wrong decisions.

Ingredients
2tbspolive oil
3garlic clovespeeled
1 14.5-oz candiced tomatoes
1/2tspdried oregano
1/4tspred pepper flakesoptional

4-6slicescrusty bread such as sourdough
1cupshredded Mozzarella cheese
Instructions
In a saucepan heat 1 tbsp olive oil over medium-low heat. Mince 2 of the garlic cloves and add to the oil. Cook, stirring frequently, for 1-2 minutes until fragrant. Add tomatoes, oregano, red pepper flakes, and a pinch of salt. Bring to a simmer then reduce heat to low and simmer, stirring occasionally, for 10-12 minutes.
Meanwhile, position a rack on the top shelf of oven and set to broil. Rub each slice of bread on both sides with remaining garlic clove and brush both sides with remaining olive oil. Arrange bread slices on a sheet pan and place on the top rack of oven. Broil for about 1 minute or until bread is toasted to your liking. Flip bread over and top the untoasted side with mozzarella cheese. Return to the top rack of oven and broil for about 1 minute until cheese is completely melted and is starting to brown.
Slice bread into strips if desired. Divide sauce into bowls (or one large bowl if doing a shared appetizer) and serve with cheesy toast for dunking.
