Curry powder is a bit of a flavoring shortcut, with a wide variety of spices blended together so that just a spoonful can add loads of flavor to whatever you are cooking. Here this all-in-one powerhouse is mixed into melted butter and tossed with crisp, freshly popped popcorn for a snack that has the uniquely bold and comforting taste of curry.

Ingredients
1tablespooncoconut oil
1/2cuppopcorn kernels
4tablespoonsbutter
1tablespooncurry powder

Instructions
Heat a large Dutch oven over medium-high heat. Add coconut oil.
When the oil has melted and begins to lightly smoke add the popcorn kernels and stir continuously until they start to pop. Cover with lid and reduce heat to medium-low. Give the pot an occasional shake. When popping becomes infrequent turn off heat and remove lid (some popping will continue as it cools).
While popcorn is popping melt butter in a skillet or saucepan over medium heat. When melted add curry powder and stir to combine. Remove from heat.
Pour curry-butter over the popped popcorn and toss together. Season to taste with salt.
Notes
If you don't have a Dutch oven any heavy, covered pot should work. Curry powders can vary in flavor and heat intensity depending on the brand, so be sure to choose one that has the spice-level you prefer.
