I must admit my dog, Grus, has become a bit of a sourdough fiend. He knows when a loaf is baking and is more than happy to get some bread scraps as a snack. To make him even happier I’ve taken to making treats with sourdough discard. These soft and savory cookies flavored with chicken stock and loaded with oats and carrots are a recent creation he has been particularly enamored with. This is an easy way to treat your dog to something special (and use up some discard while your at it).
Preheat oven to 350°. Line two large baking sheets with parchment paper.
To a large bowl or the bowl of a stand mixer with paddle attachment add oats, starter, flour, carrot, and stock. Mix until a cohesive dough forms.
Scoop dough into 1 tablespoon balls and transfer to baking sheets about 1 inch apart. Flatten each with a fork in a crosshatch pattern.
Bake for 10-12 minutes until completely set. Transfer to a wire rack to cool completely before serving. Keep refrigerated for longer storage.
