Salty, seared spam in a fluffy egg scramble.
I’m not ashamed to admit that I sometimes get a craving for the salty goodness that is canned Spam. It is especially enticing at breakfast as an accompaniment to eggs. For this scramble I’ve also included some tender-crisp broccoli and potatoes and well as a bit of melty cheese to round out the meal. If you ever feel a spam craving coming on, this should scratch the itch.
Spam Scramble with Broccoli and Potatoes
This quick and easy, one-skillet scramble features tender-crisp broccoli and potatoes mixed with fluffy scrambled eggs. But the real stars of the show are the salty seared Spam cubes that adorn this mixture. To finish it off some melty cheddar cheese loosely binds it all together, and an optional dash of hot sauce can kick up the spice level.
Ingredients
- 2 tbsp olive oil
- 1 medium Yukon gold potato cut into 1-inch cubes
- 1 head (~9 oz) broccoli cut into bite-sized florets
- Salt and pepper
- 6 oz Spam cut into cubes
- 3 eggs
- 1 tbsp sour cream or yogurt
- 1/2 cup shredded white cheddar cheese
- Hot sauce for serving (optional)
Instructions
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add potato and broccoli to skillet, season with a pinch of salt and pepper, and toss to coat in oil. Add 1 tbsp water, cover, and cook for 5 minutes. Uncover, add spam, and cook for an additional 5-10 minutes, stirring occasionally, until browned and vegetables are tender.
- While vegetables are cooking whisk together eggs, sour cream or yogurt, and a pinch of salt and pepper in a small bowl. Set aside.
- Remove contents of skillet to a bowl. Add remaining 1 tbsp olive oil to skillet and reduce heat to low. Add egg mixture and cook, stirring to break up curds, until only slightly wet appearing. Remove from heat and return broccoli, potatoes, and spam to the pan. Sprinkle cheese over the top and cover for about 1 minute until cheese is melted.
