Sweet sourdough crackers with dunkable dessert dip.
Sourdough crackers are one of my favorite ways to use up discard. But sometimes I want a sweet treat instead. That’s where these come in: crispy, tangy, buttery, and sweet. They are perfect for dunking in a homemade ricotta and cream cheese dip. This could be served for dessert but also work as a fun party snack, and after-school treat, and I’m even guilty of having them for breakfast.
Sourdough Dessert Dunkers
Inspired by the beloved Dunkaroos of my childhood (a hot item during lunch time trading as I remember), this recipe uses sourdough discard to create crispy, sweet, and somewhat tangy crackers made for dipping in a luscious mix of whipped cream cheese and ricotta. If you want to keep it traditional, mix some sprinkles into the dip, I opted instead to serve it studded with semi-sweet chocolate chips, but fruit or nuts might make intriguing add-ins as well. Perfect for entertaining or as a single-serve movie snack, I doubt you will want to trade it for anything else.
Ingredients
Crackers
- 250 grams (1 cup) sourdough starter discard/unfed, 100% hydration
- 220 grams (1½ cups) 00 or all-purpose flour
- 85 grams (6 tbsp) butter room temperature
- 99 grams (½ cup) packed brown sugar
- 3 grams (½ tsp) table salt
Dip
- 8 oz cream cheese room temperature
- 240 grams (1 cup) ricotta cheese
- 113 grams (1 cup) powdered sugar
- 1 tsp vanilla
- 1 cup chocolate chips
Instructions
- Preheat oven to 350°. Line two large baking sheets with parchment.
- In a large bowl or the bowl of a stand mixer with paddle attachment combine starter, flour, butter, brown sugar, and salt. Mix until a cohesive dough forms.
- Turn out dough onto a floured surface. Roll out dough evenly to a roughly 12×15 inch rectangle, adding flour to surface as needed if the dough is sticking.
- Cut dough into desired shapes using a knife or pizza cutter. Transfer to prepared baking sheets. Poke each cracker a few times with a fork.
- Bake for around 25-30 minutes, rotating about halfway through, until golden brown and crispy. Transfer to a wire rack to cool.
- In a large bowl or the bowl of a stand mixer beat together ricotta, cream cheese, and powdered sugar on medium speed until smooth and fluffy, 4-5 minutes. Beat in vanilla and then gently fold in chocolate chips or whatever add-ins you are using. Keep chilled until ready to serve.
- Serve dip alongside crackers for dunking.
Notes
Using ’00’ flour will make crispier crackers but if you don’t have any all-purpose flour will work just fine too. Chocolate chips can be omitted from the dip or swapped for whatever add-ins you like.
