Pineapple and Spam Fried Rice

Salty spam and sweet pineapple combine with fresh veggies and toasty rice.

If you have leftover rice in the fridge, put it to use in this quick and delicious dish. All it takes is one skillet. Start with searing the spam and caramelizing the pineapple. Remove them and add in the veggies to stir fry. Next scramble the eggs and throw in some flavorings. Add back the pineapple and spam, along with the rice, and let it cook all together until the rice is perfectly toasty. If using fresh pineapple it can be served out of the rind, for a little extra fun.

Pineapple & Spam Fried Rice. For this Hawaiian-inspired fried rice, pineapple and spam provide the perfect sweet and savory complements. They are cooked until the pineapple is caramelized and the spam is seared, before being tossed in with the rest of the dish to meld the flavors and toast the rice. Bell peppers, carrots, and corn serve as the vegetable element, but could easily be swapped for whatever veggies you like. If using fresh pineapple, the fried rice can be served in a hollowed out “pineapple boat” to add a little extra flare to a weeknight meal. (Serves 2) -1 tbsp soy sauce -1 tbsp rice wine vinegar -1 tbsp white miso -2 eggs -2 tbsp canola oil, divided -½ block spam (preferably less-sodium), cut into ½ inch cubes -1 cup pineapple, diced -½ green bell pepper, diced -1 carrot, peeled and diced -½ cup corn kernels -4 garlic cloves, finely chopped -2 green onions, light green and white parts only, thinly sliced -1½ cups cooked rice, preferably leftover -Fresh basil (optional), for garnish In a small bowl whisk together soy sauce, rice wine vinegar, and miso. Set aside. In another small bowl beat eggs together. Set aside. Heat 1 tbsp canola oil in a large skillet over high heat. When oil shimmers add spam and pineapple and cook, stirring occasionally, until browned, about 5-7 minutes. Remove to a bowl. Add 1 tbsp canola oil to the skillet then add bell pepper, carrot, and corn. Cook, stirring occasionally, for 3-4 minutes until softened and browned. Add garlic and green onions and cook briefly until fragrant. Move vegetables to one half of skillet and pour beaten eggs into the other half. Gently stir to break up curds as they form. Mix together with vegetables. Add soy sauce mixture to the skillet. Add rice and return spam and pineapple to skillet. Mix together then spread into an even layer. Let cook for about 20-30 seconds mix and spread into an even layer again. Repeat 2-3 times until rice is lightly browned. Remove from heat and serve. Ingredients
